Ingredients
- 2 slices Bread Crusty wholegrain
- 2 tablespoons Sun-dried Tomatoes Drained
- 1 tablespoon Oil Reserved from the sun-dried tomatoes
- 1 Avocado Pitted & sliced
- Half a Lemon
- 1-2 Eggs To be poached or fried
- Salt & Pepper To taste
- 2 tablespoons Feta cheese
- 1 tablespoon Chives

Instructions
- Preheat the oven grill setting on high. Rub your pieces of toast with the reserved olive oil from the sun-dried tomatoes and sprinkle lightly with salt.
- Cook eggs to your liking. While your eggs are cooking, place the bread on a baking sheet and put under the grill for about 1 minute or until toasted to your liking. (Watch closely as toast can burn FAST.)
- Once the bread is toasted, remove from the oven and top with sliced sun-dried tomatoes and avocado. Drizzle the avocado with lemon and then sprinkle with dukkah.
- Add your eggs and season with salt and pepper. Crumble over some feta and chopped chives to garnish.
